Why does flour weight matter more than volume?
A cup of flour is not a fixed weight, because it depends on how packed the flour is. A scooped cup can weigh 140 grams or more, while a sifted cup may be closer to 110 grams. This calculator uses 125 grams per US cup for all-purpose flour as its reference, though estimates vary (King Arthur Baking, for example, lists 120 grams), so weighing on a kitchen scale gives you the most consistent results.
How do I convert grams to cups for baking?
Divide the gram amount by the grams-per-cup value for that specific ingredient. For example, 250 grams of white sugar at 200 grams per cup equals 1.25 cups. Every ingredient has a different density, so the conversion factor changes; butter (227 g/cup) and cocoa powder (85 g/cup) are nowhere near the same.
Is a US cup the same as a metric cup?
