How long does it take to thaw a turkey in the refrigerator?
Allow about 24 hours of thawing for every 4 to 5 pounds, with the fridge set to 40 F or below. A 16 pound bird needs roughly 3 to 4 days. This calculator uses the conservative end (4 pounds per 24 hours) for the start-by time so the turkey is fully thawed. Once thawed, it keeps safely in the fridge for 1 to 2 days before you cook it.
How long does cold-water thawing take?
Allow about 30 minutes per pound. Seal the turkey in a leak-proof bag, submerge it in cold tap water, and change the water every 30 minutes so it stays cold. A 12 pound turkey thaws in about 6 hours. Cook it immediately once it is thawed.
Can I thaw a turkey on the counter?
No. The USDA warns never to thaw a turkey at room temperature, because between 40 F and 140 F bacteria multiply quickly on the outer layers while the center is still frozen. Stick to the refrigerator or the cold-water method, which are the two safe options this calculator plans for.
When should I take the turkey out of the freezer?
Enter your cook time and the calculator subtracts the conservative thaw estimate to give the latest date and time to start. For a fridge thaw of a 15 pound bird that is about 90 hours, or roughly 3.8 days, before you cook. Starting a little earlier is fine, since a thawed bird holds for 1 to 2 days in the fridge.
What if the turkey is still partly frozen on cook day?
A bird that is still icy in the center is not ruined. You can finish it in cold water at 30 minutes per pound, or roast it straight from partly frozen, which adds about 50 percent to the cooking time. Never refreeze a raw turkey that was thawed in cold water, and do not stuff a turkey that is not fully thawed.
Is this thaw time exact?
It is a planning estimate based on USDA guidance, not a guarantee. Real thaw speed depends on your refrigerator temperature, the water temperature, and the shape of the bird. Always confirm there is no ice in the cavity before cooking, and cook the turkey to a verified internal temperature of 165 F.
