Why grams beat volume

For dry baking ingredients, a kitchen scale removes the packing variance that ml and cup measurements bring. The volume numbers above use a fixed density, so a sifted cup of flour and a packed cup can differ by more than 10 percent in real recipes.

Why do denser ingredients have less volume per gram?
Density is mass divided by volume, so a denser ingredient packs more grams into the same milliliter. Turn the relationship around: for a fixed mass, denser means smaller volume. Water is the benchmark at 1.0 g/mL, so 100 g of water is 100 mL. Honey at 1.42 g/mL packs 42 percent more mass into each mL, so 100 g of honey only fills about 70.4 mL. Table salt at 1.217 g/mL takes about 82.2 mL for the same 100 g. Lighter-than-water ingredients flip the picture: olive oil at 0.92 g/mL gives 108.7 mL for 100 g, and sifted flour at 0.529 g/mL spreads 100 g over about 189 mL, almost twice the volume of the same mass of water.
Why is baking by weight more accurate than by volume?
Because volume measurements depend on how you fill the cup, and weight does not. The same all-purpose flour can range from 0.529 g/mL when sifted to 0.59 g/mL when packed, an 11.5 percent density swing for a single ingredient. Translate that to a recipe and a single 1-cup (240 mL) measure of flour delivers anywhere from about 127 g (sifted, spooned) to about 142 g (scooped and packed), and packed brown sugar can spread further than that. Reading the scale once gives you the same grams every time; reading the cup line gives you whatever your scoop technique produced that morning. Professional bakeries weigh ingredients, and most modern recipe sites (King Arthur, Serious Eats, ATK) now publish gram weights for exactly this reason.
Why do honey and syrups have such a different ml/g ratio than water?
Honey is roughly 80 percent dissolved sugars (fructose, glucose, sucrose, maltose) by mass and only about 17 to 18 percent water. Dissolved sugar packs far more mass into each milliliter than water alone, pushing honey to about 1.42 g/mL. That is 42 percent more mass per mL than water, which is why beekeepers can use a refractometer (a density-based moisture meter) to grade honey. Maple syrup lands around 1.33 g/mL, corn syrup near 1.38 g/mL, and concentrated fruit juices follow the same pattern. In the kitchen, this density gap is the reason a tablespoon of honey is closer to 21 g than the 15 g of a tablespoon of water, and why an honest recipe will give honey amounts in grams or in volume plus a weight.
